Obtained from approximately 15 year old vines resting on superficially siliceous soil, with clay and Silex in depth. The grapes are harvested by hand between the end of September and the beginning of October, they ferment spontaneously in old oak barrels where they then mature for 12/18 months. No filtration or clarification.
Withered white flowers and white pulp fruit, mineral notes of flint and aromatic herbs
