Obtained from approximately 65 year old ungrafted vines resting on superficially siliceous soil, with clay and Silex in depth. The grapes are harvested by hand between the end of September and the beginning of October, they ferment spontaneously in old oak barrels with maceration for about a month where they then mature for 12/18 months. No filtration or clarification.
