Produced from 60 year old vines. It is a late and manual harvest, the fermentation is spontaneous in old barrels. Then 3/4 years in wood without topping up (no “ouillage”). Depending on the result the wine will be called differently: if similar to a Vin Jaune from Jura, the name is Sava.Sol. If, however, the aromas resemble a Spanish Sherry, Esquiss is born.
On the nose, Noce and Caramel pass through, followed by Quince, Almond and Spices such as Turmeric
Persistent and bursting, soft but agile, very elegant and alluring
Serving temperature 16°-18°
Foie Gras but it is also perfect with Comtè cheese

Following the teachings of his father, Claude, Julien Courtois began to independently manage the Le Clos de la Bruyere vineyard in 1998. Julien looks after 4.5 ha in Soings en Sologne. Its wines are natural and are characterized by a unique and singular taste.
