From Menu Pineau vines planted in 1958. Manual harvesting, spontaneous fermentation for 15/30 days in old barrels, no batonnage and no invasive interventionism. In a word: original, very original indeed.

Average age of the vines is 60 years. Manual harvesting and spontaneous fermentation in old barrels are followed by 3 or 4 years of wood without filling (no "ouillage"). Depending on the result, the wine will be called differently: if similar to a Vin Jaune of the Jura, the name is Savasol. If instead the aromas resemble a Spanish Sherry, Esquiss is born.
