Manual harvest at full maturation, slow fermentation of the must in steel then at spring temperatures the second fermentation begins in bottles closed with bidules and crown caps. Refines on the yeasts for 2 years in stacks, manual remuage and then disgorgement. Residual Sugar < 1 g/l

Ome, Franciacorta
Small family-run winery since 2001, inspired by the passion of Bigio Papi (Luigi) who loved Franciacorte and the care of its vineyards.
The company has been handed down for two generations and now Luigi’s niece Elena and her husband Paolo are in the saddle, and it is located on the hill known as La Costa.
The vineyards benefit from many hours of sunshine, pleasant breezes and very fine clay-limestone soil, the panorama is boundless. The cellar was also excavated here, in the rock.
The production is natural and sustainable, recyclable packaging and a photovoltaic system that makes the estate autonomous.
