Saint Emilion, Bordeaux

Situated at the bottom of the hills of Château Angelus and Château Beauséjour Bécot, this small 1.22-hectare property is kept by Béatrice and Vincent Rapin like a garden. The production method is organic, no herbicides or chemicals are used. It is for this reason that a small flower called 'La Dame de Onze Heures' (The Lady of Eleven) grows serenely and without problems. Of the lily of the valley family, the flower opens every day at eleven o'clock.

The winery's intention was to produce healthy, fruity and elegant wines. In the vineyard, it was decided to use a short two-branch pruning, to limit the number of buds per plant and to reduce the number of leaves.

Today, in the search for maximum quality, a maximum of eight bunches per plant is used. In the cellar, vinification is conducted with no addition other than a little sulphur dioxide, only indigenous yeasts and no addition of any other product whatsoever. The wines are then aged in 1200-litre wooden barrels and Tuscan terracotta amphorae.

At bottling there is a slight clarification and filtration.
