Manual harvest, spontaneous fermentation with indigenous yeasts and maceration for approximately 20 days, aging for 2 years in 1200 liter Florentine terracotta jars. No addition of sulfur dioxide in any of the production phases, bottled without filtration or clarification

Withered red flowers and mentholated hints, jammy berries and iodized notes, mineral with hints of tobacco and cocoa

Energetic and elegant, fresh and with a seductive, soft and long fabric

Saint Emilion, Bordeaux

Located at the bottom of the hills of Château Angelus and Château Beauséjour Bécot, this small property of 1.22 hectares is kept by Béatrice and Vincent Rapin as a garden. The production method is organic, no herbicides or chemical products are used. It is for this reason that a small flower called “La Dame de Onze Heures” (The Lady of the Eleven) grows peacefully and without problems. From the lily of the valley family the flower opens every day at eleven o’clock.

The company’s desire was to produce healthy, fruity and elegant wines. In the vineyard it was decided to use short pruning with two branches, to limit the number of buds per plant and the number of leaves was reduced.

To date, seeking the highest quality, we have a maximum number of 8 bunches per plant. In the cellar the vinifications are carried out without any addition other than a little sulphur, only indigenous yeasts and without the addition of any other product of any kind. The wines are then aged in 1200 liter wooden barrels. and terracotta amphorae produced in Tuscany.

At the time of bottling there is a light clarification and filtration.
