Re-fermented in the bottle. The grapes, from a vineyard 100 metres above sea level near Lake Champlain, are pressed by foot. When the first fermentation is not yet complete, the wine is bottled. A shocking, divisive wine. Aromatic nose with notes of lemon, eucalyptus and lychee. Electric, salty, intense palate. Obviously we are among those who love it....

Loup d'Or 2017, Frontenac Gris

Another wine with an Italian name. Very low yields, only 12 hl/ha. The grapes, from a vineyard 100 metres above sea level near Lake Champlain, are pressed by foot. After 5 weeks of maceration on the skins in fibreglass tanks, the wine finishes its ageing in glass demijohns. On the nose, there are notes of cherry and apricot. Multifaceted, rich and succulent mouthfeel.

Vin Jancu 2016La Crescent

Deidre and Caleb's love for Italy and its products becomes clear with this wine. The name is a dedication to Salvo Foti's Vinu Jancu (white wine in Sicilian dialect). Here the yields are even lower: just 10 hl/ha. The grapes, which come from a vineyard 100 metres above sea level near Lake Champlain, are pressed by foot. After 5 weeks of maceration on the skins in fibreglass tanks, the wine finishes its ageing in glass demijohns. On the nose, honey, beeswax and lily of the valley. Salty and persistent on the palate.
