Pinot Noir is a red wine produced by Les Cailloux du Paradis in Soings en Sologne and obtained from pure Pinot Noir grapes coming from a soil rich in clay and flint and harvested manually. The winemaking involves spontaneous fermentation from indigenous yeasts with aging for 10 months in non-first passage wood, they are finally bottled without additives, filtrations or clarifications.
