Etourneaux 2014Gamay
An atypical Gamay from old vines with very low yields, also due to the flocks that target the vineyard: the name of the wine is dedicated to them. The aging in old wood vats ranges from 36 to 48 months according to the classic style of the winery. The color of the wine is a transparent ruby and the bouquet is captivating, delicate and layered, soft and complex at the same time: it smells of lemon thyme, sour fruit, rhubarb and eucalyptus and it is then in the mouth that the wine takes flight. The taste is very articulated and already in the center of the tongue it has a salivating acidity that is simply irresistible. The body is light and rhythmical, a masterpiece that is not afraid of prolonged contact with oxygen, on the contrary it reaps contagious benefits. A great bottle! Unfiltered and without added sulfites.
L'Icaunais 2o16Gamay
From a vine that before phylloxera (around 1850) covered more than 9,000 hectares in Yonne, while today it has practically disappeared. Icaunais means "native of Yonne", a French department in the Burgundy-Franche-Comté region bordering on Aube and Côte-d'Or. The name derives from the Gallic goddess Ica-Onna, which later became Icauna and finally Yonne. Grapes grown on silex clay soil where treatments are kept to a minimum. Very low yield of 25-30 hl/ha and maturation in small, not new, barrels. Unfiltered wine with no added sulphites. A unique wine, in history and taste
Racines Rouge 2014Blend of 30 native varieties of the territory
From soils rich in limestone and chalk. Yield per hectare of just 18 hectoliters. Vinified and aged for 30 months in used barriques. Almost impenetrable in the glass, the nose offers notes of plum, cherry, rock, chalk and iron. The palate is deep, with hints of currants and figs, all supported by a vibrant minerality.
Romorantin 2016, Romorantin
From a vineyard planted on calcareous soil. The grapes are fermented in used barriques, where they are subsequently aged for 42 months. Floral nose, hints of laurel, acacia and almonds. The taste is taut, nervous and lively.
Or'norm 2016Sauvignon Blanc
From old vines with massal selection planted on silex and clay, the parcel is immersed in an ecosystem rich in fruit trees. Treatments with nettle, horsetail and minimal doses of Bordeaux mixture. Maceration on the skins gives this Sauvignon a very unusual character: 30 months' maturation in non-new barriques and one year in the bottle before release. Intense gold color with copper reflections. Rich and complex nose, floral and nuanced with quince: reminiscent of a Vin Jaune from the Jura. The palate is intense and mineral with hints of citrus and pear. The finish is persistent and saline. A golden juice, an "out of the norm" juice. Perfect with chicken curry.
Evidence 2016, Menu Pineau
A wine made from grapes and oxidative winemaking typical of the Jura, starting with a microscopic yield of 8 hl/ha and continuing with a long maturation in wood and then finishing in the bottle six years after the harvest. A very mineral wine with a beautiful aromatic complexity combining dried fruit and nutty notes over smoky and oxidative notes. Rich and balanced liquid with nice acidity. Unfiltered, unclarified and no added sulphur. Perfect on Comté and Parmigiano Reggiano.

Les Cailloux du Paradis is a farm located 35km from Blois in the Sologne, surrounded by woods and nature. In this corner of natural paradise, the wheat eaten by the cows is grown and the manure produced is used in the vineyard. The producers of this company Claude Courtois and his son Etienne, are considered among the precursors of natural wines in France.
