Romorantin 2016 x 2, Romorantin
From a vineyard planted on calcareous soil. The grapes are fermented in used barriques, where they are subsequently aged for 42 months. Floral nose, hints of laurel, acacia and almonds. The taste is taut, nervous and lively.
Or'norm 2016Sauvignon Blanc
From old vines with massal selection planted on silex and clay, the parcel is immersed in an ecosystem rich in fruit trees. Treatments with nettle, horsetail and minimal doses of Bordeaux mixture. Maceration on the skins gives this Sauvignon a very unusual character: 30 months' maturation in non-new barriques and one year in the bottle before release. Intense gold color with copper reflections. Rich and complex nose, floral and nuanced with quince: reminiscent of a Vin Jaune from the Jura. The palate is intense and mineral with hints of citrus and pear. The finish is persistent and saline. A golden juice, an "out of the norm" juice. Perfect with chicken curry.
Evidence 2016, Menu Pineau
A wine made from grapes and oxidative winemaking typical of the Jura, starting with a microscopic yield of 8 hl/ha and continuing with a long maturation in wood and then finishing in the bottle six years after the harvest. A very mineral wine with a beautiful aromatic complexity combining dried fruit and nutty notes over smoky and oxidative notes. Rich and balanced liquid with nice acidity. Unfiltered, unclarified and no added sulphur. Perfect on Comté and Parmigiano Reggiano.
Racines Blanc 2014, Chardonnay, Sauvignon Blanc, Menu Pineau, Romorantin
The 4 grapes are harvested and vinified together in used barriques. The wine is aged in wood for 30 months. "The whole is greater than the sum of the parts" said Aristotle and this wine is the proof. In the glass the characteristics of the individual grape varieties integrate and exponentially multiply the complexity. Crystalline purity, white-fleshed fruit, rock, tension, depth. An energetic wine.
Quartz Blanc 2018Sauvignon Blanc
From a vineyard planted on soils rich in sand and quartz. The grapes are fermented in used barriques, where they are subsequently aged for 18 months. As soon as it is uncorked the nose is shy with light notes of green apple. Just a little bit of oxygen and it explodes with notes of brown sugar, cinnamon, celery, cucumber and a hint of nutmeg. The flavor is vibrant with acidity driving the sip, accompanied by notes of white peach and sage. Long finish.
