Cotes Catalanes Blanc is a white wine produced by Matassa a Calce, in Languedoc Roussillon, and obtained from manually harvested Granache Gris and Macabeu grapes. Spontaneous fermentation with indigenous yeasts and two-week maceration, then aging for 14 months in wood. Bottled without additions, clarifications or filtrations. Cotes Catalanes Blanc on the nose recalls hints of spices, flint and pear, hazelnut and sultanas; in the mouth it is fresh and salty, full-bodied and with a long finish, ideal in combination with pecorino di fossa
