French Disko is a red wine produced by Matassa a Calce, in Languedoc Roussillon, and obtained from manually harvested Cinsault grapes. Brief carbonic maceration and 9-month aging in cement. Bottled without additions, clarifications or filtrations. Frech Disko is light and polite, fun and drinkable, its perfumes are a triumph of that wonderful land from which it comes. We pair it with pasta as usual!

Lime, Cote Catalanes (France)
Tom Lubbe, from South Africa to a small village of 300 people in Roussillon, without return.
It was 2002 and in a short time Tom became a cult producer not only for the wonderful terroir of Calce.
His wines are tense, nervous and mineral like the granite on which the old sapling vines are planted, at the same time graceful and ethereal, like the wind that unfailingly combs those wild hills.
