  The grapes come from vines over 40 years old, are harvested manually, macerate for 36 hours in terracotta amphorae and are vinified in 225 liter fûts de chênes; 36 months on the yeasts for secondary fermentation, and disgorgement 12 months before being put on the market

Benjamin Choppin is the last vigneron of a family that boasts 7 generations of Champagne producers, and rigorously leads the Domaine Maurice Choppin together with his wife Marine.

We are located in Damery, a few km from Epernay, in the heart of the Marne Valley and we are talking about an absolutely virtuous maison, producing in a sustainable, organic and HVE3 (High Environmental Value) certified way.

The desire is to preserve on the one hand a biodiversity, that of Champagne, often humiliated and mistreated, through a massive presence of trees, meadows and wild flowers; on the other, the purity and identity of the wines through limited interventionism.
