From a young vineyard on limestone land, accessible only on horseback, it ferments and ages for 10 months in 25 hectolitre barrels. White flowers, above all jasmine, then citrus notes of lemon and lime, sweet spices and great use of wood. Courchamps, Saumur
Michel Chevrè began his exclusion in the world of wine in 1992 when he started working as cellar manager at the Domaine des Roches Neuves of the famous Thierry Germain.
Since 2007, he has owned a small plot of Chenin Blanc in Courchamps, under the Saumur AOC appellation. In 2009, he started making wine using the Germain cellar, thus giving birth to Clos de l'Ecotard.
Chevrè wine production is characterised by a non-interventionist approach in the vineyard and the use of indigenous yeasts in the cellar for spontaneous alcoholic fermentation in barrels.
