Michel Chevrè Clos de l’Ecotard 2021 Magnum

Saumur Clos de l’Ecotard is a white wine produced by Michel Chevrè in Courchamps, in the Loire Valley. The Chenin Blanc grapes are harvested manually. Spontaneous fermentation with indigenous yeasts and rapid maceration in barriques, 1/3 of which are new and 2/3 not first used. The aging takes place in 1200 liters of wood for one year. Saumur Clos de l’Ecotard has a complex nose that opens with floral and fruity notes, passing from apple and pear to citrus and honey hints, then again wet straw and white pepper. In the mouth it is fresh and majestic, very persistent, to try with a truffle risotto.

Vinification in 225 and 400 liter barriques, 1/3 new and 2/3 second passage, then remains on the yeasts for 12 months in large 1200 liter barrels

Very fresh and structured tasting, majestic elegance, very persistent

Serving temperature 14°-16°

Courchamps, Saumur

Michel Chevrè began his career in the world of wine in 1992 when he began working as a cellar manager at the Domaine des Roches Neuves of the famous Thierry Germain.

Since 2007 he has owned a small plot of Chenin Blanc in Courchamps, under the Saumur AOC denomination. Since 2009 he has started making wine, using the Germain cellar, thus giving life to Clos de l’Ecotard.

The production of Chevrè wine is characterized by a non-interventionist idea in the vineyard and by the use of native yeasts in the cellar for a spontaneous alcoholic fermentation that takes place in the barrel.
