From a young vineyard on limestone territory, accessible only on horseback, it ferments and ages for 10 months in 25 hectoliter barrels.
White flowers, above all jasmine, then citrus notes of lemon and lime, sweet spices and great use of wood
Fresh, light and light-hearted sip, but only apparently because the structure is important, the alcohol is well integrated and the wood is perceptible just right. Fabulous on the finish

Courchamps, Saumur
Michel Chevrè began his career in the world of wine in 1992 when he began working as a cellar manager at the Domaine des Roches Neuves of the famous Thierry Germain.
Since 2007 he has owned a small plot of Chenin Blanc in Courchamps, under the Saumur AOC denomination. Since 2009 he has started making wine, using the Germain cellar, thus giving life to Clos de l’Ecotard.
The production of Chevrè wine is characterized by a non-interventionist idea in the vineyard and by the use of native yeasts in the cellar for a spontaneous alcoholic fermentation that takes place in the barrel.
