Michel Chevrè Saumur Les Pentes du Clos 2015

Saumur Les Pentes du Clos is a white wine produced by Michel Chevrè in Courchamps, in the Loire Valley. The Chenin Blanc grapes are harvested manually. Spontaneous fermentation with indigenous yeasts and rapid maceration in barriques, 1/3 of which are new and 2/3 not first used. The aging takes place in 1200 liters of wood for one year. Saumur Les Pentes du Clos boasts a floral and citrus nose with smoky hints, in the mouth it is fresh and full-bodied, savory and persistent, very suitable in combination with Chinese rice-based dishes.

Michel Chevrè began his career in the world of wine in 1992 when he began working as a cellar manager at the Domaine des Roches Neuves of the famous Thierry Germain.

Since 2007 he has owned a small plot of Chenin Blanc in Courchamps, under the Saumur AOC denomination. Since 2009 he has started making wine, using the Germain cellar, thus giving life to Clos de l’Ecotard.

The production of Chevrè wine is characterized by a non-interventionist idea in the vineyard and by the use of native yeasts in the cellar for a spontaneous alcoholic fermentation that takes place in the barrel.
