On the hill of Castelrotto, in the heart of the historic Valpolicella area, the 55-year-old vines are still cultivated using the "vite maritata" system, i.e. rows of vines interrupted by tall trees (mulberry and almond trees) which support them. The grapes are dried in the fruttaio for about 120 days before fermentation in open oak vats. Maturation for 3 years in 25 hl oak casks and ageing in the bottle for at least 2 and a half years. Complex, dark flowers, underbrush, plum and candied berries. Then Black Pepper and Cocoa. Soft and enveloping, full-bodied, with lively tannins and great elegance. A wine of great persistence

From the hill of Castelrotto, in the heart of the historic Valpolicella area, on the southeast ridge of Monte Dall'Ora at about 150/200 metres above sea level on calcareous soil of Eocene origin. The grapes are harvested by hand starting in the last ten days of September. Obtained with the traditional Ripasso technique, through the natural refermentation of Valpolicella Classico on Recioto marc for about 7 days. Aged in large casks for 6 months and then in bottles for 8 months. Hints of dark petal flowers, then cherry and plum, herbs and spices. Fresh and savoury on the palate, polite tannin and long sip.

The hill of San Giorgio di Valpolicella, also known as San Giorgio Ingannapoltron, is a unique terroir at an altitude of 500 metres with a south-west exposure that is harvested between the end of September and the beginning of October. Spontaneous fermentation of 8/10 days. Maturation for 12 months in 25 hl casks followed by further ageing in the bottle. Rose and Violet, Small Red Berries, Undergrowth, Spices and Balsamic notes. Fresh and reassuring, savoury and deep on the palate. An elegant and fine wine with a long finish
