Sete wine is an ancestral method of Monte dall'Ora in San Pietro in Cariano, Valpolicella. Fermentation of the Garganega and Malvaisia grapes takes place spontaneously with indigenous yeasts for about 10 days. The subsequent re-fermentation takes place in the bottle with the Recioto flower must, and finally refinement in stainless steel for 5 months; this refinement takes place outside the cellar to keep the temperature low and naturally clarify the wine. San Pietro in Cariano (VR)

The vineyards of Monte Dall'Ora are located in an area of the classic Valpolicella particularly suited to viticulture: grapes have been cultivated and wine produced on the Castelrotto hill since the 5th century.

The decision to produce wines from a single cru sums up the company's search for identity. At Monte dall'Ora and Camporenzo the vines are cultivated using the Veronese pergola system on terraces facing south-east towards the city of Verona.

San Giorgio is home to the high hill Valpolicella Superiore, where finesse and verticality are predominant. Finally, a new synergistic vineyard project is taking shape in Sausto.

The earth is half a metre deep and rocks outcrop, forming a calcareous basement of Eocene origin. The rocks, which are quite friable, drain excess water and provide the necessary humidity for the roots of the vines, which descend into the depths, extracting valuable mineral substances.
