The grapes come from Carema and the vineyards just outside the Carema DOC. The grapes are harvested in boxes, crushed, destemmed and then fermented spontaneously before aging in steel until May. Bottling at the end of spring without filtration and with only added SO2.

Northern Piedmont is an area that in recent years has been enjoying increasing success and arousing curiosity, heroic viticulture, terraces, low yields and large aromatic concentrations.
It is thanks to young people like Gian Marco Viano and Monte Maletto that this area is returning to the forefront of the news.
Viano looked for financiers to recover some abandoned vineyards and later took over management of a small vineyard, learning, with the help and suggestions of local producers, the techniques suitable for making quality wines.
The company has half a hectare of vineyards in Carema, plus another plot where Erbaluce is grown, in the municipality of Parella. There are two wines produced by the company at the moment: the Erbaluce “Vecchie Tonneaux”, fresh and mineral, and the “Battito del Maletto”, future Carema DOC, 95% Nebbiolo and 5% Ner d’Ala, produced in quantity very limited, balsamic, intense, rich in nuances.
