🛁 Essencia is the pure liquid that drips freely from the container where the grapes with the noble rot are harvested: the result is a must with a very high concentration of sugars whose subsequent fermentation takes place very slowly only thanks to the indigenous yeasts, the only ones able to ferment with such quantities of sugar. Essencia must have a minimum of 250 g/lt of sugar but can go up to 800 g/lt, when it goes close to this threshold it is called Nektar

The Monyok Winery was founded in 1972 by the father of the current owner Norbert Monyok. The
vineyard property is 18 hectares located on slopes historically known for the cultivation of some of the best
Tokaji cru: Nyulaszo - Betsek - Donzka. Four varieties are cultivated: Hárslevelű (30%) - Furmint (30%) -
Sárgamuskotály (30%) - Oremus (10%). The Monyok cellar has an area of 1500 square metres and extends for 600
metres along tunnels up to 20 metres deep. These cellars typical of the area have the
characteristic of having constant year-round temperatures of around 11° and a humidity of around 90-95 %, which
allows the slow fermentation of wines/ musts and the formation of a particular mould that permeates all the
walls giving the wines their characteristic aroma. Located in the far north-east
of Hungary, the Tokaji region is protected to the north by the Carpathian and Zemplen mountains, while to the south lies the great
Hungarian lowlands. The hills of Tokaj are very high and touch 700 metres, the vineyards extend from 200 to
to 400 metres; two rivers, the Bodrog and the Tisza, surround the area and are responsible for the humidity that in autumn
is essential for the formation of noble rot. The climate is continental, very hot in summer and mild in
autumn, with humid winds coming from the south; winters are very cold.
