N°3 2019 Bressan

N°3 is a red wine produced by Bressan in Farra d’Isonzo in Friuli, and obtained from Cabernet Sauvignon, Pinot Noir and Schioppettino grapes. After crushing, they macerate for 30 days on the skins with spontaneous fermentation by indigenous yeasts; during this period, daily pressing, pumping over and delestage are carried out in the cellar. In the following phase, the must is separated from the skins, which are gently pressed to facilitate complete draining; at this point the wine ages in wood for 3 or 4 years depending on needs, and finally in bottle for a few months. N°3 2017 is a great wine to be served at temperatures that are not excessive and to pair with truffle-based dishes. The nose opens with vinous hints which disappear with oxygenation, leaving room for floral and fruity, toasted, spicy and balsamic notes. In the mouth it is powerful and elegant, full and with silky, very long tannins.

  Crushing, destemming and then fermentation on the skins for around 30 days, with various punchings, pumping over and daily delestage; subsequently the fermented must is separated from the skins, which are gently pressed to facilitate total draining and nothing else. The wine is then placed in different 2000 liter barrels. In these barrels the wine can begin its life, deciding autonomously and completely naturally when to carry out malolactic fermentation. In the following 3/4 years the wine continues its refinement on the yeasts with periodic batonnage.
