🛁 Fruit from the oldest Fer Servadou vineyards on limestone soils. Whole cluster vinification with about 20 days of maceration. Matured for 12 months in exhausted barriques.
👃🏻 Rosa and Viola, then red fruits, spices and a very fine smoky note.
👅 On the palate, it is lively, with a savoury note accompanying the long finish.

Nicolas Carmarans grew up in a family of restaurateurs and has always been passionate about natural wine, so much so that he opened the Café de la Nuovelle Mairie, one of the first natural wine bars in Paris and France.
After many years behind the counter offering natural wine, he decided it was time to produce his own and so he bought a plot of land in Montezic, in the beautiful Aveyron region, nestled between mountains, fortified villages and medieval castles.
Geographically, it is located within the triangle between Toulouse, Montpellier and Clermont Ferrand, in the South West, close to the central masque.
It produces Aligotè, Chenin Blanc and two really little-known varieties such as Fer Servadou and Negret de Banhars.
