Oncia Bianca is a Biodynamic Carlo Noro red wine produced in Piglio and obtained from manually harvested Malvasia di Candia and Passerina del Frusinate grapes. This wine takes its name from the vineyard from which the grapes come, with 50-year-old vines and a significant altitude of around 360 metres. Spontaneous fermentation with indigenous yeasts and maceration for about 12 days in steel, where it then ages for 8 months, malolactic fermentation is carried out naturally. Before being put on the market, it rests for 3 months in glass, without clarification or stabilization. Oncia Bianca is a fun and fragrant white wine reminiscent of ripe pears and peaches, with hints of white flowers and iodized hints. Equipped with a clear astringency in the mouth, it is fresh and tasty, long and fun. Try it with rice and cannelini beans.

Vinification entirely in steel, spontaneous fermentation with indigenous yeasts and 12-hour maceration, then refinement for 8 months, malolactic fermentation is carried out naturally. Finally it is bottled without filtration or stabilization, where it rests for 3 months before being put on the market.

Piglio, Lazio Carlo Noro is a pioneer of biodynamics in Italy and a renowned producer of biodynamic preparations. Born in 1951 in Piglio, in Ciociaria, he is the son of a farmer who mainly cultivated vines and olive trees, also producing wine and oil. After working as a specialized linotypist and spending a few years in a bank, Carlo approached biodynamics in the 1970s. During a conference on Rudolf Steiner, he meets Alex Podolinsky, an Australian farmer and pioneer of the discipline. Podolinsky is impressed by Carlo’s preparations and convinces him to undertake a radical change in his life. Carlo then moved to Labico, where the biodynamic approach revitalized the soil. In 2009, Carlo’s sons, Simone and Valerio, founded the winery, following his agricultural experience. The company is Codex certified for organic farming and Demeter for biodynamic farming. The harvest of the grapes takes place with great care, and the wine is vinified with minimal intervention and maximum attention in the Piglio cellar
