Ornellaia is a great Italian red wine produced by Antinori from Cabernet Sauvignon, Merlot, Cabernet Franc and Petit Verdot grapes, harvested manually in 15 kg boxes. The bunches are meticulously selected on a double sorting table before and after destemming. They are subsequently subjected to soft pressing. Each variety and each plot is processed separately. The alcoholic fermentation takes place in stainless steel vats at temperatures between 26-30°C for a week. This is followed by maceration on the skins for a total of about two weeks. The malolactic fermentation takes place in oak barriques, of which 70% are new and 30% second passage. The wine remains in barriques at a controlled temperature for a period of approximately 18 months but after the first 12 months the assembly proceeds. So the joint winemaking time is 6 months. The wine finally rests in the bottle for a year before being introduced onto the market. Ornellaia is a magical wine with a truly complex nose that ranges from hints of evolved undergrowth, dried petals, red fruits in jam and earthy notes, to memories of sweet spices, and finally of roots, tobacco and coffee. In the mouth it is absurdly elegant, silky and persistent, full and generous, refined and long. Try it with braised meats or Rossini fillet.

Dried rose and violet petals with hints of red and dark berries in jam, followed by earthy and slightly truffle notes. The nose refers to wood, then to toasting and sweet spices, vanilla and cinnamon, then to tobacco and coffee, licorice and mint.
Powerful and fearless, generous and balanced, of absurd elegance. The tannin is silky, the body is full and soft and the finish is very long.
