The Ancestral Method is the Father of sparkling wine making, and it was until the mid-nineteenth century.
It is a production method that is still very widespread in France, where these wines are called Pet Nat, Petillant Naturel, and which is coming back into vogue in Italy, Austria and Spain.
It is a refermentation in the bottle with an ancestral method which requires very little human intervention and at most the addition of grape must; the grapes are delicately pressed in order to stimulate the natural yeasts present on the skin and activate fermentation.
Subsequently the fermentation is blocked by lowering the temperature of the bottled wine while waiting for the temperature to rise, without adding yeasts or sugars.
The carrona cork, unlike the Classic Method, remains in place, given that there is no disgorgement, as well as residues on the bottom.
The result is a fresh, slightly sparkling, tasty and quick-drinking wine, suitable for any time of the day.
