The grapes come from Kimmeridgiano soil, the harvest takes place manually then debourbage at 12° with alcoholic and malolactic fermentation which is carried out in wood, it spends 30 months on the yeasts. The dosage is minimal, approximately 3 g/l and degorgement takes place 6 months before marketing

Scents of citrus and fresh exotic fruit with fragrant and herbaceous, mineral and slightly spicy notes

The Gerbais are a family of winemakers in Celles Sur Ource for 3 generations.

The company is now run by Pascal, whose care of the vineyard can be described as obsessive. He is a vigorous man who constantly aims to raise the quality of his offering.

All Gerbais Champagnes rest on the lees for at least 30 months before being disgorged.
