🍇 Pinot Noir 50%, Chardonnay 25%, Pinot Blanc 25%
🛁 The grapes come from Kimmeridgian soil, the harvest is done manually then debourbage at 12° with alcoholic and malolactic fermentation carried out in steel, it spends 30 months on the lees. Dosage is minimal, about 3 g/l and degorgement takes place 6 months before marketing.

The Gerbais are a family of winemakers in Celles Sur Ource for 3 generations.
The company is now run by Pascal, whose care of the vineyard can be described as maniacal. He is a vigorous man who constantly aims to raise the quality of his offerings.
All Gerbais Champagnes stay at least 30 months on the lees before being degorged.
