Pinner is a white wine produced by Cavallotto in Castiglione Falletto, in the Langhe, and obtained purely from Pinot Nero grapes with a small addition of other red berries, all vinified in white. The grapes come from a plot very close to Bricco Boschis and are harvested manually. Spontaneous fermentation with indigenous yeasts in steel tanks, where it subsequently ages for up to 12 months. It rests for 3 months in glass before being put on the market. Pinner on the nose boasts floral and tropical fruit scents, but also apple and pear, then nutty and herbaceous, slightly balsamic and mineral notes. In the mouth it is full and enveloping, balanced and long, to be combined with typical Piedmontese risottos

Castiglione Falletto (CN)
The Cavallotto wine estate is located in Castiglione Falletto, in Piedmont, and belongs to the territory of one of the most important municipalities in the Langhe, within which there are some of the most prestigious crus in the whole the denomination of Barolo. A story that dates back to 1928!
The Cavallotto company itself can count on one of the most important crus, Bricco Boschis, spread over an area of 23 hectares of vineyards. Today it is Olivio’s children – Laura, Giuseppe and Alfio Cavallotto – who firmly hold the reins of the company. In addition to the Bricco Boschis vineyard, the Cavallottos purchased 60% of the historic Vignolo cru in 1989. Both crus are dedicated to the cultivation of Nebbiolo from Barolo.
The company, however, also owns other plots, such as five hectares of Dolcetto cultivation (Vigna Melera and Vigna Scot), two hectares of Barbera (Vigna del Cuculo) , to which are finally added the remaining three hectares cultivated with Grignolino, Freisa, Pinot Noir and Chardonnay.
In the vineyard, the agronomic choices are aimed at respecting the environment, ecosystem and nature; what is adopted between the rows is an innovative organic viticulture system, according to which the plants, trained using the Guyot method, reach a density of 5 thousand vines per hectare and are managed while maintaining low yields per hectare, and they are cared for following the rhythm of the seasons.
In the cellar, the spaces are functional and designed to accompany the grapes’ journey towards transformation into wine in the best possible way. All things considered, the result is simply excellent wines, capable better than any other of representing the highest enological essence of the Langhe lands.
