Planals is a red wine produced by Matassa a Calce, in Languedoc Roussillon, and obtained from the blend of Grenache Gris for 50% and Grenache, Moscato di Alessandria and Macabeu for the remaining 50%. The grapes are harvested manually in 500 kg bins where they are pressed with their feet to avoid semi-carbonic maceration. Spontaneous fermentation with indigenous yeasts and maceration for 5 days, in order to create an infusion, without pumping over. The refinement lasts 7 months between cement and Austrian tonneaux. Drawn off before bottling, it does not see any additions, clarifications or filtrations. For us Planals is a wine clearly consistent with Tom’s style, easy to drink, unforgettable in spirit. The nose is varied, with typical scents of the scrub and some hints of liquorice and coffee, eucalyptus and almond. In the mouth it is light and slender, soft and drinkable, very persistent. Let’s try it with chicken Cacciatore!

The harvest is manual in 500 kg bins, the grapes are pressed with the feet to avoid triggering semi-carbonic maceration, followed by a short maceration of 5 days – for a sort of infusion without pumping over – with spontaneous fermentation by indigenous yeasts. Aging for 7 months between cement and large Austrian tonneaux. It is drawn off before bottling without the addition of sulfur dioxide.
Floral and herbaceous, fruity and mineral, with just hints of liquorice and coffee, almond and eucalyptus

Tom Lubbe, from South Africa to a small village of 300 people in Roussillon, without return.
It was 2002 and in a short time Tom became a cult producer not only for the wonderful terroir of Calce.
His wines are tense, nervous and mineral like the granite on which the old sapling vines are planted, at the same time graceful and ethereal, like the wind that unfailingly combs those wild hills.
