Tuffeau 2018, Chenin Blanc

The grapes ferment spontaneously in steel. The wine rests on the fine lees for between 18 and 24 months in oak barriques and is clarified by decantation. No filtration at bottling and only a minimal addition of sulfur dioxide. Aromas of undergrowth and salty puffs then lime and tropical fruit. Tasty and sharp, with an oxidative sweetness that makes the sip complex and the finish satisfying.
