From a loamy soil at 400 meters above sea level, an uncompromising wine that combines classic vinification with indigenous yeasts and aging in steel for a year at a controlled temperature with the absence of added sulphites, replaced by the use of a natural product based of chestnut flowers. From a plant adjacent to the property’s vineyards, the flowers are harvested in July before being dried and transformed into powder: the addition tested was 40 grams per hectoliter and the result surprised everyone. The Instituto Politécnico de Bragança has been studying the antioxidant and antimicrobial effects since 2015.

Fernando Paiva, former history professor, was one of the pioneers of Portuguese biodynamics. Over the years he became interested in the Steiner principles which he adopted in 2007.
Quinta da Palmirinha is among the few Demeter certified wineries in all of Portugal and is located near the town of Lixa, in the north-west of Portugal.
