🛁 The grapes come from clayey-calcareous and sandy plots, macerate for a few days with spontaneous fermentation in steel containers and mature in used oak barrels. The wine is bottled without clarification or filtration and with a homeopathic addition of sulphur dioxide (the wine has a total sulphur dioxide level of less than 10 mg/litre)
👃🏻 Dried violets, jammy red and dark berries, black pepper and lots of minerality
👅 Deep and intense, wild and savoury, the tannin is soft and the finish persistent

Gols, Burgenland
Stefanie and Susanne, the Renner sisters, are the daughters of winegrowers, and in 2014 they decided to take the reins of the family estate, founded in Gols in the late 1980s, and convert it to biodynamic, complete with certification obtained in 2018.
The estate covers 4 hectares of vineyards, where the work is all manual and without the use of chemicals. The grapes grown are those of the Austrian tradition, Zweigelt, Blaufränkisch and Sankt Laurent.
Their wine philosophy was strongly influenced by trips to France and Australia, where they were able to gain experience with great vignerons such as Tom Lubbe of Matassa in Languedoc Roussillon and Tom Shobbrock in Australia.
Curiously, their flagship wine, Waiting for Tom Rot is dedicated to these two great producers.
