Riesling, net of its variants, is a white grape variety of German origin with fruity, often citrus, aromas and great aging potential.

Outside Germany it is widely cultivated in nearby Alsace, Austria and Italy; furthermore it is also present in Slovenia, Hungary, the New World and Argentina.

Riesling gives life to very refined, fascinating wines, with great freshness and low alcohol content, especially in Moselle, where it draws on truly rich soil and sublimates itself.

According to the German classification system they are distinguished into:

• Trocken, without residual sugar
• Spatlese, from a late harvest, with a greater structure and a slight sugar content.
• Auslese, from a late and selected harvest, may have been attacked by noble rot.
• Beerenauslese, moldy, certainly attacked by Botrytis Cinerea.
• Eiswein, Riesling whose bunches have been frozen by frost and which develop a notable sugar concentration.
• Trockenbeerenauslese, practically infinite, wines whose bunches undergo almost total drying, sweet and with a unique flavour.
