Rufo 2023 Matassa

Rufo is a white wine produced by Matassa a Calce, in Languedoc Roussillon, and obtained from manually harvested Macabeu grapes. These come from 30-year-old vines positioned high up, and subsequently crammed into 500kg bins where they are pressed in whole bunches without maceration. The refinement lasts 7 months between cement and old 600 liter tonneaux. It is drawn off and bottled. Rufo is a fresh wine that tastes of Mediterranean scrub with its hints of jasmine and wild herbs, citrus fruits and plum, honey and anise. In the mouth it is so savory that it seems salty, fresh and persistent, yet delicate, we recommend it in combination with fettucine, butter and lemon.

  The grapes come from vines with an average age of 30 years located at altitude, they are harvested and packed into 500 kg bins, then pressed directly into whole bunches. Aging for 7 months in cement and in old 600 liter barrels. It is drawn off just before bottling
