Macerazione sulle bucce di quasi 140 giorni in vasche d’acciaio. Fiori da Thè, frutta esotica e tanta mineralità con note di erbe aromatiche. Un macerato di rara bevibilità, leggero ma al tempo stesso di struttura, fresco e minerale, il tannino si disperde finemente nel calice, il finale è gustoso.

Prima fermentazione spontanea in acciaio, rifermentazione in bottiglia con l’addizione del proprio mosto (da uva di vendemmia tardiva) che era stata congelato in precedenza. Pied de cuve preparato di notte in tini aperte, seguono fermentazione e macerazione sulle bucce di circa 48 ore, poi acciaio. Tanti fiori bianchi e frutta fresca, sentori di zucchine romanesche e di carciofo, ritorni minerali e di erbe aromatiche come Salvia e Timo. Leggero e sapido, fresco e minerale, leggermente aromatico

In 2020, the Sassopra project was born, 5 hectares in the southern area of Frascati, practically overlooking Rome and a soil that has been cultivated for over 3000 years, thanks to the incomparable, unique and finally rediscovered terroir of the Castelli Romani.
Volcanic soil, hilly landscape, the sea just a few kilometres away, here you have everything you need to produce very elegant wines.
In Sassopra, biodynamic wine is produced thanks to the meeting of the two young men with important names such as Carlo Noro and Adriano Zago and their strong respect for the environment and the land.
Lazio is a region that is exploding in the media and this is also thanks to young and talented producers like Marta and Federico, good guys!!!
