The grapes come from a varied soil made of schist, quartz and gray marl, the fermentation takes place with whole bunches, the refinement lasts 20 months in French barriques, it is not filtered or clarified, the production is less than 2000 litres
Lots of rose and violet petals, lots of ripe red fruits, spices and aromatic herbs, plenty of minerality
Fresh and crunchy, very mineral and expressive, fine and almost salty, the tannin is noble and the finish is long

Yoshiaky Sato and his wife Kyoko met during their respective assignments for a Japanese banking group operating between Tokyo and London; they were both hired in 1998 but only met many years later, in time to decide to fly together to New Zealand to produce wine. They later graduated in agronomy and oenology in Christchurch and settled in Central Otago where they founded their company, Sato Estate
