🛁 The grapes come from a variegated soil made of schist, quartz and grey marl, fermentation takes place in whole bunches, ageing takes 20 months in French barriques, it is neither filtered nor clarified, production is less than 2000 litres

Yoshiaky Sato and his wife Kyoko met during their respective jobs for a Japanese banking group operating between Tokyo and London; they were both hired in 1998 but did not meet until many years later, in time to decide to fly to New Zealand together to make wine. They later graduated in agronomy and oenology in Christchurch and settled in Central Otago where they established their company, Sato Estate
