Sauvignon is one of the most famous and cultivated vines in the world, originally from Bordeaux it sublimates throughout the Loire, with a peak of absolute qualitative excellence in the areas of Sancerre and Pouilly Fumè; it gives life to wines of good aroma, medium body and not always suitable for very long refinements, except for some magnificent exceptions.

It is also widely used in Italy, especially in Friuli and Alto Adige, but it can really be found everywhere such as in South Africa, Australia and New Zealand, where it takes on less floral and more structured connotations.

On the nose it is a riot of herbaceous and vegetal aromas, the green pepper is characteristic, but also nettle, tomato leaf, exotic fruit and a vast floral range are easily recognizable on the nose; unusual notes can also be found for a wine such as the famous cat urine.

It is a delicate vine in winemaking, it prefers steel and often suffers from the barrel even if most of its production takes place right there, in the mouth it gives sensations of great freshness, discreet aroma and structure.
