🛁 Produced from 60-year-old vines. It is a late and manual harvest, fermentation is spontaneous in old barrels then 3/4 years of wood without filling (no "ouillage"). Depending on the result, the wine will be called differently: if it resembles a Vin Jaune from the Jura, the name is Sava.Sol. If instead the aromas resemble a Spanish Sherry, Esquiss is born.
👃🏻 At the nose they review the Noce and Caramel then Quince, Almond and Spices such as Turmeric
👅 Persistent and Prorompente, soft but agile, very elegant and winking
👍🏻 Serving temperature 16°-18°.
