Savennières Roche Aux Moins Sans Soufre is a white wine made from Chenin Blanc grapes produced by Domaine Aux Moins in Sevennières, in the Loire. On shale soils with sandstone and limestone, exposed to the South-South-West and protected from cold winds, a great French wine is produced from 50-year-old vines. The harvest is manual, followed by direct pressing, controlled fermentation and 18 months of maturation in exhausted barriques. Savennières Roche Aux Moins Sans Soufre presents notable tension, purity of fruit and a broad aromatic profile, with notes of honey, quince, flint and hazelnuts. On the palate, it is well balanced between pulp and acidity, with a slightly bitter finish and great aging potential.

Manual harvest and direct pressing, fermentation with indigenous yeasts and aging for 18 months in exhausted barriques. Bottled without filtration or clarification

**Domaine aux Moines** is a historic winery in the Loire Valley, with roots dating back to 1130, when Cistercian monks planted the first vineyards. After a brief period in the 1920s under the ownership of the Benz family, today the company is managed by **Tessa Laroche**, who inherited the leadership from her mother Monique, founder of the domaine in 1981. The estate extends for 12 hectares with 50-year-old vines, close to Nicolas Joly’s famous **Coulée de Serrant**. Since 2011, the **Savennières Roche aux Moines** area has obtained its own appellation for the distinctive character of the Chenin Blanc grown on shale soils. Since 2006, production has been organic, with low yields and high potential. The nearby Loire River protects the vines from spring frosts and helps the grapes ripen.
