🛁 The grapes are harvested ripe and come from half-century-old vineyards on marl-rich, clayey-calcareous Kimmeridgian soils, fermentation is spontaneous with indigenous yeasts in steel for 3 months, then 2 years of ageing in the same container

Splendid winery in the heart of the AOC Sancerre covering 3 hectares of silica-rich vineyards that Sebastien Riffault inherited from his father and runs with his wife.
The company has been certified organic since 2007, but the approach in the vineyard is actually completely natural and the grapes are always harvested when fully phenolic.
In the cellar, alcoholic and malolactic fermentations are spontaneous, the wine is neither clarified nor filtered
