The grapes are crushed, destemmed and fermented in steel tanks. The chilled must is then re-fermented in the bottle. The wine remains in contact with its own yeasts for 6 months and is then disgorged. Thanks to its low alcoholic content and lively acidity, it is the ideal ally for traditional Emilian dishes. Secula is born in what we can define as the absolute best area for the production of Lambrusco di Sorbara and Lambrusco Salamino; basically this area between San Prospero and Sozzigalli, with its loose, sandy, well-drained soils, can undoubtedly be defined as Cru.
The owners, Dino Lugli and Gabriele Valentini, can count on an area of 15 hectares, cultivated mainly with fruit; 4 hectares are planted with Lambrusco di Sormara, Salamino and Grechetto Gentile with a casarsa system that preserves the ripeness of the grapes and their acidity.
The aim in the vineyard is to achieve zero chemical residue, eliminating sulphur and copper. Everything is done naturally, except for the fermentation, which is controlled.
The wines stay for 6 months in stainless steel and then re-ferment in the bottle and age for a period ranging from 4 months for the sparkling wines to 4 years for the Metodo Classico.
