🛁 The grapes ferment (alcoholic and malolactic) spontaneously in contact with the skins for about a week. Maturation is in stainless steel for at least 6 months, then in the bottle for 3 months.

Tenuta Macchiarola is a company run by a pharmacist named Domenico, who is Mimmo to his friends, and since 2007 has been producing the wines that his father-in-law Francesco, known as Franco, used to produce halfway between Manduria and Taranto. Clear no?!
The reality is simple, Domenico has a great passion for wine and has decided to abandon the life of a farmer to become a wine craftsman, absolutely organic in the vineyard and natural in the cellar, except when the Apulian summers get hot and you run the risk of throwing away all that year's work. In no way are selected yeasts, filtrations or clarifications contemplated.
The production area is made up of red soil and calcareous clay, and is home to Negroamaro, Primitivo, Fiano and Verdeca, as well as olive groves and orchards.
Domenico likes to mention that Tenuta Macchiarola's wines are straightforward, like the people of Puglia.
