Bianco di Cesare is a white wine from Tiberi produced in Montepetriolo in Umbria and obtained from Grechetto grapes. The harvest is manual, with spontaneous fermentation by indigenous yeasts and 72-hour maceration on the skins. The refinement lasts 6/9 months in used oak wood, then in the bottle without filtration or clarification or addition of sulphur. Bianco di Cesare recalls hints of fresh pulpy fruit and smoked and woody minerals. In the mouth it is crunchy and slender, tasty and clean, of white meat
