🛁 Harvested by hand from vines with a yield of 30/40 quintals per hectare, spontaneous fermentation with maceration for approx. 10 days in open containers, maturing first in small oak barrels for 20 months then in bottles for up to 8 months
👃🏻 Withered red flower and berry jam, very tertiary, black pepper and cinnamon, clove and roasting notes, liquorice and earthy memories, slightly balsamic and mineral
👅 Full and enveloping, soft and savoury, fresh with silky tannin, persistent
👍🏻 Serving temperature 18°-20°.

Triasso, Lombardy
2004 was an important year for the Sassella area, firstly for the generous harvest and secondly for the birth of the Cooperativa Agricola Triasso e Sassella, and the two are directly linked.
Before that year, the wine producers around Triasso, a small high-altitude village in the Sassella area, used to deliver their grapes to the large local wineries, but they then decided to go it alone and order far fewer grapes.
At that point, the winegrowers decided to work in synergy and make their own wine in collaboration with the Fojanini Foundation. The first wine was Valtellina Superiore Dogc Sassella Sassi Solivi.
The orientation is decidedly natural in the vineyard as in the cellar, respecting the terroir and the end customer and resulting in Chiannevasca (Nebbiolo) that is powerful and aromatic, rustic and mountainous, but with class.
