Champagne L'Eclos de la Cote 2015, Pinot Noir - Two Bottles
This is a splendid parcel cuvée from the lieu-dit les Clos de la Côte, the 45-year-old vines stand on clay and limestone soils, the technique is that of elevage sur lie for 8 months in barrels followed by two years and six months of bottle fermentation. Only indigenous yeasts are used, with spontaneous malolactic fermentation and no filtration. Harvest 2016, dégorgement at the end of 2019, not dosed. Pot Pourri of Rose and Violet, red and black berries, great minerality with spicy notes and light vegetal returns. Superb taste, great balance between extreme drinkability and structure, very elegant with a very long finish.
Champagne Lalore Brut Nature 2018Chardonnay
The fhe alcoholic fermentation is spontaneous, as is the malolactic fermentation, thanks to the indigenous yeasts, then élevage for 9 months in used Chablis barriques, followed by 16 months on the lees. It is not dosed, filtered or clarified. Fragrant notes of bread crust open a broad nose of white flowers and fresh fruit, mineral with hints of sweet spices. Exuberant, fresh, savoury and delicate, elegant and long on the palate.
Champagne Portlandia Brut Nature 2014, Pinor Noir 75%, Chardonnay 15%
The grapes come from the classic pebbly and chalky soil of the Cote des Bars, vinification in wood using indigenous yeasts and subsequent spontaneous alcoholic and malolactic fermentation. Maturation on the lees for 24 months. Not dosed.Deep and elegant nose, of great finesse. The nose is floral and fragrant, fruity, with the apple dominating, and clear hints of minerals and herbs. Deep and elegant, dynamic and fresh, savoury and long on the palate.
Champagne Elion Rosé Brut Nature 2018, Pinot Noir - Two Bottles
This is a Rosé Champagne made using the de saignée technique. The base wine is aged in wood on the lees for 24 months. Violets and wild strawberries, then mineral notes and finally hints of China and rhubarb. Vinous and full, delicate and elegant, sapid and persistent.
