🛁 The grapes are grown with the aim of a very low yield, in this case only 35 hl/ha, carbonic maceration with whole cluster fermentation. Elevage in barrique, the wine is then bottled without filtration and with very little sulphur dioxide added. Aromas of cranberry and herbaceous notes of cinnamon and dried leaves with cloves in the background, but what is surprising is the explosion of energy in the sip. A thrill to drink.
👃🏻 Red flowers on the nose and juice of berries with well-defined blueberry, mineral and herbaceous with small hints of dried leaves and notes of cinnamon, black pepper and cloves
👅 Explosive in the mouth but easy to drink, the tannin is gentle, savoury and with a long finish
👍🏻 Serving temperature 18°-20°.

Avallon (France) Vini Viti Vinci is a micro-shop created by Nicolas Vauthier, one of the forefathers of the promotion of natural wines in France. Vauthier founded l'aux Crieurs de Vin (a wonderful bar a vin in the centre of Troyes) and remained at the head of it for about 10 years until he decided to leave its management to devote himself to wine production. The grapes are exclusively of organic or biodynamic origin and vinification is done with as little intervention as possible.
