Volume 1 2019 , Müller-Thurgau, Grüner Veltliner, Sauvignon Blanc
The grapes are harvested at the same time and fermented together with the whole bunch in steel containers with a light maceration on the skins. It is bottled with residual sugars and then completes its fermentation in the bottle. It remains 6 months on the lees before disgorging (à la volée). It is topped up with the same wine and is not dosed. Delicate and inviting nose with white flowers, aniseed and nectarine in evidence. Light and smooth on the palate.
Volume 2 2020, Grüner Veltliner 80%, Musckateller 20%
The grapes are harvested in the same period and fermented together with whole bunches in steel containers with a light maceration on the skins (1 week). It is bottled with
residual sugars and then complete fermentation in the bottle. It remains 6 months on the lees before disgorging (à la volée). It is topped up with the same wine and is not dosed. Expressive nose with notes of watermelon, strawberries and tea leaves. The palate is fresh, with a preponderant mineral note that fills the mouth. Closes on notes of lime.
Volume 3 2020Welshriesling, Riesling
The grapes are harvested at the same time and fermented together with the whole bunch in steel containers in contact with the skins. It is bottled with residual sugars and then completes fermentation in the bottle. It remains 12 months on the lees before disgorgement (à la volée). It is topped up with the same wine and is not dosed. Very interesting, starting with the low pressure (about 1.8 atmospheres). The nose is a basket of citrus and white flowers. Juicy, captivating, with hints of passion fruit and a very persistent finish.
Volume 4 2020, Muller Thurgau, Gruner Veltliner
The grapes are harvested in the same period and fermented together with whole bunches in steel containers in contact with the skins. It is bottled with still some residual sugars to then
complete fermentation in the bottle. It remains 12 months on the lees before disgorging (à la volée). It is topped up with the same wine and is not dosed. More citrus on the nose but here it veers more towards orange-skinned citrus. Fills the mouth with fresh salty flesh.
Volume Rosé 2020Cabernet Sauvignon, Zweigelt - Two Bottles
The two grapes ferment in steel and wood containers with a light maceration on the skins. The wine is bottled with residual sugars and then completes its fermentation in the bottle. It remains 6 months on the lees before disgorging (à la volée). It is topped up with the same wine and is not dosed. The nose is currant, pomegranate and wild strawberry. The palate is dry, taut and salty.

All wines originate from more or less prolonged maceration on the skins aimed at extracting the characteristic aromas of the different grapes.
